Popis: We don't like to forget our vegetarian friends on this list of Scary Food, so I want to introduce Corn smut, a plant disease caused by a fungus that grows on maize. The fungus attaches itself to the above-ground parts of the corn, and is known in Mexico as huitlacoche which is typically found as a filling in quesadillas and other tortilla-based foods, and soups. Huitlacoche is typically consumed fresh and can be sourced from farmer's markets, street vendors, purchased at restaurants and can be bought in canned form in some markets or via the internet (the perfect gift for the one you love!). Countryside farmers have been known to spread the spores around intentionally to encourage the growth of the fungus. In some parts of the country, the fungus is called "hongo de maiz" which translates to "maize fungus".
