Nare-Sushi - a smelly fermented fish

Popis: Nare-sushi is the direct ancestor of today's sushi. Like some other terrifying food, it came as a result of an emergency and a lack of preservatives. Japanese fishermen at Lake Biwa had to hand over most of their catch to nobility. In return, they received rations of rice, which was mostly infested with mould and therefore inedible. The fish were stored by wrapping them in this mouldy, milky rice and pouring in salty water. Salt was a scarce item, so they saved it and used it sparingly. Therefore, the solution was relatively weak and had the colour of dark tea. In this state the fish were stored in a dark place at room temperature for years. Rice releases lactic acid which dissolves both proteins and small bones. Good nare-sushi can be said to begin with the head. If the fish is ripe, the head will dissolve in your mouth without chewing. A serving of this delicacy also costs hundreds of dollars, and archival of pieces is similar to the practice of wine storage.
