Popis: This dish is called "Mexican caviar," and you would be forgiven for guessing that fish eggs will be a part of the menu. Not exactly. They are eggs but not what you'd expect. To collect them you will need a bucket, shovel, and an anthill. These are the eggs from the ant speceis Liometopum apiculatum, which build nests in the roots of agave and cactus. Their eggs are only available from 10 to 12 weeks between February to April. In Mexico, it is a well-known delicacy that costs up to $100 per kilogram. Escamoles are most often fried in a pan and served in a tortilla with avocado sauce with a pinch of crushed chili.
